Ferrous gluconate is yellow-gray or light yellow-green crystal particles or powder with a slight caramel smell. Soluble in water, 5% aqueous solution is acidic and almost insoluble in ethanol.
Ferrous gluconate, the molecular formula is C12H22O14Fe·2H2O, and the relative molecular mass is 482.18. It can be used as a color-protecting agent and nutritional fortifier in food. It can be made by neutralizing gluconic acid with reduced iron. Ferrous gluconate is characterized by high bioavailability, good solubility in water, mild flavor and no astringency. It is often fortified in milk drinks, but it can also easily cause changes in food color and flavor, which limits its application to a certain extent.
According to my country's "Hygienic Standards for the Use of Food Nutritional Enhancers" (GB14880-2012), ferrous gluconate can be used as a color protectant for pickled vegetables (olives only), and the maximum usage amount is 0.15g/kg. According to Japanese regulations, this product can be used in milk substitutes, weaning foods, and maternal milk powder.
