Isomalt is a chemical substance, white, odorless crystals, sweet in taste, about 45% to 65% of the sweetness of sucrose, and slightly hygroscopic.
1. Hard candy
Because isomalt has low water absorption, the stamped, filled, bonded or cast hard candies will not stick together and are not easy to cold flow. The products can be packed in bulk without heat sealing and packaging one by one, which can greatly reduce costs and give the products a longer shelf life.
2. Candy coating
The low water absorption of isomalt is also widely used in this field. 160-200 mesh powdered isomalt can extend the shelf life of candy after being used in candy coating, making the candy easier to package, thereby reducing production costs.
3. Chewing gum and tablets
Isomalt has low solubility. It is crystalline in chewing gum and tablets. Its taste characteristics are very close to sucrose. It has a mild sweetness and low negative dissolution heat. It can fully show the flavor of candy. The sweetness lasts longer than other products.
4. Chocolate
Isomalt has low negative solubility and pure taste, comparable to sucrose, so it can be used as an ideal raw material for producing chocolate suitable for diabetics, people who are afraid of obesity or low-calorie types.
