Disodium ethylenediaminetetraacetate, also known as EDTA-2Na, is a good complexing agent in chemistry. The chemical formula is C10H14N2Na2O8, and the molecular weight is 336.206. It has six coordinated atoms, and the complex formed is called a chelate. EDTA is often used in complexometric titration, generally to determine the content of metal ions. EDTA has important uses in dyes, food, medicine and other industries.
Disodium ethylenediaminetetraacetate is a tasteless, odorless or slightly salty white or milky white crystalline or granular powder, odorless and tasteless. It is soluble in water and extremely difficult to dissolve in ethanol. It is an important chelating agent that can chelate metal ions in the solution. It prevents discoloration, deterioration, turbidity and oxidative loss of vitamin C caused by metals, and can also improve the antioxidant properties of oils and fats (trace metals in oils and fats such as iron and copper have the effect of promoting oil oxidation).
1. Among the salts of EDTA, the disodium salt is the most important. It is an important complexing agent. It is used in chemical copper plating, gold plating, lead-tin alloy plating, electrochemical polishing of steel parts, and solutions before silver plating of copper parts. It can also be replaced by EDTA-Na. It is also used in detergents, liquid soaps, shampoos, agricultural chemical sprays, color photosensitive material processing bleaching fixers, water purifiers, pH regulators, anticoagulants, etc. In the chemical reduction initiation system for styrene-butadiene rubber polymerization, disodium EDTA is a component of the active agent, mainly used to complex ferrous ions and control the polymerization reaction rate.

According to GB 2760-2014: Disodium EDTA can be used in jams, vegetable purees or sauces (except tomato sauce), with a maximum usage of 0.07g/kg; in preserved fruits (only sweet potato preserved fruits), pickled vegetables, canned vegetables, canned nuts and seeds, canned grains, with a maximum usage of 0.25g/kg; in compound seasonings, with a maximum usage of 0.075g/kg; in beverages (except packaged drinking water), with a maximum usage of 0.03g/kg. At the same time, GB 2760-2014 stipulates that calcium disodium EDTA can be used as an antioxidant in compound seasonings, with a maximum usage of 0.075g/kg.
