Gum Arabic is a safe and harmless thickening agent that solidifies naturally in the air. It is light white to light yellowish brown translucent lump, or white to orange brown granular or powder. It is a polymer electrolyte with a molecular weight of 220,000-300,000. Odorless and tasteless.
1. Food industry
Gum arabic is widely used in beverage production, for example in the production of soft drink concentrates where it stabilizes flavors and essential oils. It is also used in candy manufacturing, such as traditional hard (wine) gummy candies and soft candies, and can also be used as a foam stabilizer for marshmallows.
Gum arabic has good emulsifying properties and is particularly suitable for oil-in-water emulsification systems. It is widely used as an emulsion stabilizer in emulsified flavors. It also has good film-forming properties and can be used as a microcapsule film-forming agent for essential oils. Or other liquid raw materials are converted into powder form, which can extend the flavor quality and prevent oxidation. It is also used as a flavor carrier for baked products. Gum arabic can hinder the formation of sugar crystals and is used as an anti-crystallization agent in candies to prevent crystals from settling out. It can also effectively emulsify the milk fat in toffee to avoid overflow. It is also used to polish the surface of chocolate, so that the chocolate can only be dissolved in mouth, insoluble in hands; in carbonated drinks such as Coke, gum arabic is used to emulsify and disperse essential oils and oil-soluble pigments to prevent them from floating up during storage and causing pigment rings at the bottleneck; gum arabic also interacts with vegetable oils and resins Use one as a haze agent to add variety to your drink's appearance.
Nutritionally speaking, gum arabic generates basically no heat and is a good water-soluble dietary fiber. It is used in health products, candies and beverages. Gum arabic is also widely used in other industries. Applications in the food industry can be summarized as: natural emulsion stabilizers, thickeners, suspending agents, adhesives, film-forming agents, polishing agents, water-soluble dietary fiber, etc.
2. Printing industry
The printing surface is mainly rubbed with gum arabic liquid.
Gum Arabic is a solid crystalline object that, when soaked in water, absorbs water and swells, eventually becoming a viscous colloidal solution. Rub the liquid colloid on the printing plate and after the water evaporates, the glue returns from the liquid state to its original solid state and is adsorbed on the printing plate. Its function is to cover the plate surface with a hardened film after the glue dries, isolating the printing plate from the air, thereby preventing oxidation.
