Brilliant blue, also known as edible cyan No. 1 and edible blue No. 2, is a water-soluble non-azo colorant. It is an organic compound with a molecular formula of C37H34N2Na2O9S3 and a relative molecular mass of 792.84. Brilliant blue is an edible blue pigment and an artificial synthetic pigment. It is made by condensing and oxidizing benzaldehyde o-sulfonic acid and N-ethyl-N-(3-sulfobenzyl)-aniline.
Brilliant blue has a very strong chroma and is usually used in combination with other food pigments. The amount used in food is generally 0.0005%-0.01% (mass fraction). It can be used for beverages, candies, processed nuts, cooked beans, canned food, cakes and other decorations. The maximum amount is 25 mg/kg.
