Carmine is red to dark red uniform granules or powder, odorless. It has good light resistance and acid resistance, strong heat resistance (105ºC), poor reduction resistance; poor bacterial resistance. It is soluble in water, and the aqueous solution is red; it is soluble in glycerin, slightly soluble in alcohol, and insoluble in oils and fats; the maximum absorption wavelength is 508nm±2nm. It is stable to citric acid and tartaric acid; it turns brown when exposed to alkali. The coloring properties are similar to amaranth.
Carmine appears to be a red to dark red powder. It is easily soluble in water and glycerin, difficult to dissolve in ethanol, and insoluble in oils.
