Coconut oil is made by saponifying, acidifying, washing and dehydrating coconuts. Coconut oil is a vegetable oil, but its saturated fatty acid content is as high as 80% to 90%, which is much higher than other common vegetable oils.
The melting point of coconut oil is 23°C. Above this temperature, it is a liquid; below this temperature, it is a white paste. Its smoke point is lower, below 177ºC. Oven temperatures can be higher than this when baking bread, waffles or cooking with coconut oil. Due to the humidity of the food, the internal temperature can still be below 100°C. Be aware that any cooking oil can produce harmful substances if overheated. Coconut oil is stable and does not need to be refrigerated. It can be stored at room temperature for at least 2-3 years.
