Malic acid is stable under normal conditions and is hygroscopic when humidity is high. Triclinic white crystal. Melting point 130°C; Relative density 1.601; Solubility Easily soluble in methanol, ethanol, acetone and many other polar solvents.
1. In the food industry, it is used as sour agent, color retaining agent, preservative and emulsion stabilizer of egg yolk, etc., and also used in pharmaceuticals.
2. In the chemical industry, it can be used as one of the raw materials for the synthesis of descaling agents and fluorescent whitening agents. Added to shellac varnish or other varnishes, it can prevent the paint surface from skinning. The polyester resin and alkyd resin produced with this acid are plastics with special purposes.
