It is easily soluble in water, stable to heat, and has a low pH value. Inulin is a kind of oligofructose and also a soluble dietary fiber Inulin is a reserve polysaccharide in plants, mainly derived from plants. More than 36,000 species have been found, including 11 families such as Asteraceae, Campanulaceae, Gentianaceae in dicotyledons and Liliaceae and Poaceae in monocotyledons. For example, the tubers of Jerusalem artichoke and chicory, the tuberous roots of Dahlia (Dali chrysanthemum), and the roots of thistle are rich in inulin, among which the inulin content of Jerusalem artichoke is relatively high.
