Sodium saccharin, also known as sodium o-benzoylsulfonylimide, was developed in 1879. It is the earliest artificially synthesized non-nutritive sweetener. It is soluble in water and its sweetness in dilute solution is 200~500 times that of sucrose. , When the concentration is high, it has a bitter taste, and when heated under acidic conditions, the sweet taste disappears and can form bitter o-aminosulfonylbenzoic acid.
